- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
For Topping:

Instructions
Step 1: Prepare the Graham Cracker Crust
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press about 1 tablespoon of the mixture into the bottom of each cupcake liner to form the crust.
- Bake for about 5 minutes until golden brown. Remove from the oven and let cool.
Step 2: Make the Chocolate Cupcakes
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined.
- Carefully stir in the hot water or coffee until smooth; the batter will be thin.
- Pour the batter into each cupcake liner until about 2/3 full.
- Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely.
Step 3: Prepare the Marshmallow Frosting
- In a heatproof bowl (or using a stand mixer), combine egg whites, sugar, and cream of tartar.
- Place over a pot of simmering water (double boiler method) and whisk continuously until the mixture reaches 160°F (71°C) and sugar is dissolved.
- Remove from heat and beat with an electric mixer on high speed until stiff peaks form and the mixture is glossy (about 7–10 minutes).
- Stir in vanilla extract.
Step 4: Assemble the Cupcakes
- Once cooled, use a piping bag fitted with a large round tip to pipe marshmallow frosting onto each cupcake generously.
- Top with pieces of chocolate bars and mini marshmallows if desired.
Step 5: Toast the Marshmallow Frosting (Optional)
- Using a kitchen torch, carefully toast the marshmallow frosting until lightly browned for that authentic s'mores flavor.
